Domaine Romaneaux-Destezet – Hervé Souhaut
The Domaine was created in 1993 by Hervé. He first purchased parcels of old vines (between 50 and 100 years old). He also planted vines to reach about 5ha of surface. He also purchases selected grapes to reach a production of 25,000 bottles at the domaine. He cultivates viognier and roussanne for white, syrah and gamay for the red wines. Soil is mainly strong acidic granite. Hervé Souhaut is a trained biologist and since the very start conceived wine-making as an additive-free process, stressing the importance of healthy vines to produce stable wines.
Vin de Pays de l’Ardèche – “Viognier/Roussanne” 2019
Vineyard: right bank of the Rhone, opposite Hermitage hills. South-eastern and southern exposure. Hot climate influenced the Doux river delta
Grape variety: Viognier and Roussanne, 10 years old vines
Winemaking: Pressed directly after harvest, matured on fine lees and bottled unfiltered with less than 25mg/l S02.
This is a natural wine without added yeasts and with very little, or no added sulphites. This leads to wines with great purity of fruit but might also lead to more outspoken aromas. Beware that this style might be different from what you are used to when drinking conventional wines.
